Amazing Banana Bread! (and Some Deer vs. Husband)

The update is… the surgery went really well!  So while I am taking it easy and getting ready for my little brother’s wedding this weekend, I thought I would re-post some of my favorites.

I can’t even tell you how many times I have made this banana bread – we LOVE it around here.  I like to peel and freeze perfectly-aged bananas so when I want to make this I just have to thaw them.

So… here ya go… one of my “go-to” recipes.

You know those  moments when you  bake or cook something – and it is so good – and then you tweak it a little a few more times until you say – ok!  That’s it!  This is a keeper.  And you just know that you will make that recipe time and time again forever more.  You know those times?

Well – this is one of those times.  My husband LOVES this banana bread.  And THAT is what it is Bananananana bread.  No one will mistake it when they try it.  It is Banana-y and because of that, it is SO moist.

Here is what you need:

2 cups of flour

1 tsp baking soda

1 tsp cinnamon (more if you really like cinnamon)

(Did you know that cinnamon is a natural food preservative?  It can inhibit bacterial growth and food spoilage!  Also it can help regulate the effect on blood sugar, as well as help lower LDL cholesterol.  It can also help with arthritis and has an anti-clotting effect on blood!!!) 

1/4 tsp salt

1/2 cup of butter

3/4 cup brown sugar

2 eggs

2 1/2 cups bananas (over-ripe) – about  4 – 5 bananas

1/2 bag of your favorite kind of chocolate chips

1/4 cup of slivered almonds (optional)

1- Preheat your oven to 350 and Grease your 9 x 5 bread pan

2- Combine the flour, baking soda, cinnamon and salt together

3-  In a separate bowl, add the butter, brown sugar and eggs.

4- Mash up the bananas and add them to the butter-brown sugar mixture

5-  Combine the dry and wet mixture together.  Stir just long enough to mix everything well.

6-  Add the chocolate chips and the slivered almonds

7-  Pour the batter into the prepared loaf pan and bake for 60 minutes or until your toothpick comes out clean.

Here is what it looks like just out of the oven.

I put it out on my deck to cool.  Right next to my little seedlings.  Can you tell what they are?

And as I am out there…. I notice that something is happening in my back yard….

Oh!  Hello Mr.!  Look at how he is staring me down.  He’s not going to win the stare-off!

Thats right!

Oh look!  He has a girlfriend.  (Come to find out they had been frolicking in my front yard eating my TULIPS!)

Fences are definitely not built to keep deer out of your yard.

Whoa.  Looks like we’ve got the whole herd here today.  They are so beautiful – except when they are eating my tulips! Turns out after some investigating,  I have 1 left!  1 tulip left!

Its Mr. Wonderful.

What is he doing you ask?

And it worked.  Who knew that last year’s fireworks are also pest control?

He earned his banana bread.

  2. I can’t wait to try this banana bread. It looks yummy! I also enjoyed the whole story about the deer in the yard while the bread was cooling:)

  3. Okay, this really works… when you cut your husband’s hair, save it. Then spread the hair all around where they come into your yard. The human scent on the hair will truly deter them. I’m thinking you could perhaps even go to the local hair salon and ask for their hair clippings.

    That banana bread looks sooooo good though. I think I might have to take a break from work (and reading blogs/facebook/pinterest) and go make me some (good thing I save my peeled, ripe bananas in the freezer, too!)!!!
