A Very Berry Apple Salad | The Red Headed Hostess

I love this salad.  L.O.V.E.

It is just yummy!  I crave it.  Maybe its because I’m pregnant… but my non-pregnant husband likes it too.

I like to keep salads like this in my fridge… already assembled.  We are much more likely to eat this kind of healthy food if it is easy and ready to go.

Last Sunday I made this salad alongside teriyaki steak, and so the next night we had this salad again with that steak cut up and added in… and all I can say is YUM!  Even my husband was O.K. with a salad for dinner!

Alright… here is what you need for this salad:

Berry Apple Salad

–  Mixed Salad Greens

– Berries (I have strawberries and blackberries here, but I have used raspberries and blueberries as well)

–  Diced Apples (I LOVE Pink Lady apples in this salad)

– Red Grapes (cut in half – they are much easier to eat that way)

Sugar and Cinnamon Spiced Almonds or crushed honey roasted peanuts

Just prep all of your fruit and layer on top of the greens and drizzle with a poppy seed dressing, or the below dressing.

Balsamic Poppy Seed Dressing

1/2 cup extra light olive oil (or vegetable oil)

1/4 cup balsamic vinegar

1/2 cup sugar

1 T Rice Wine Vinegar

1/4 tsp Worcestershire

1 T Poppy Seeds

  1. I am addicted to poppy seed dressing. I LOVE it. This looks good. My easy-peasy salad is spinach/ red leaf lettuce, almonds, mandarin oranges or strawberries and poppy seed dressing. I could eat it all day, everyday.
