Chinese Chicken Salad- The Red Headed Hostess

Oh my goodness…. I crave this salad.  It is one of those “cupboard door” recipes – the kind you tape on the inside of a door so that it is super easy to get to.    And it is a crowd pleaser – so its a good option to take to a gathering when they ask you to bring a green salad.  Even men like this green salad.

You can probably figure out most of the ingredients by looking at the picture… but here is the recipe – and just to note – it is the dressing that makes this so fabulous!

1 1/2 heads of broken lettuce

3 chicken breasts, cooked and shredded

1 large can of mandarin oranges

2 green onions, chopped

Chow Mein noodles

dried cranberries

cashews

Dressing:

6 heaping T. of sugar

4 T rice vinegar

1/2 lemon (or use 1 T of mandarin orange  juice from can)

1/4 cup extra light olive oil

1 t. salt

1/4 tsp pepper

1 T toasted sesame seeds

  1. I found the ratio of vinegar to oil to be off — added extra vinegar and some additional lemon to punch it up. Also added fresh cilantro and this was WOW. Don’t be shy with your onion.
