Disappearing Blueberry Bars- The Red Headed Hostess

 

These are sooooo good.  So good. So so so good.  And they are easy.  And they travel well.  And they will disappear.  Quickly.

Just look at these blueberry bars.  All of the blueberry goodness and crust surrounding it.  Yummmmmm.   Make this, I dare you.  And you just may end up pasting this recipe on the inside of your cupboard door for quick and easy access.

Blueberry Bars Ingredients:

Crust and topping:

1/2 cup white sugar

1/2 cup brown sugar

1 tsp baking powder

3 cups flour

1 cup butter (softened)

1 tsp vanilla

1 egg

1/4 tsp salt

1 tsp cinnamon

Filling:

5 cups blueberries (frozen or fresh)

1/2 cup white sugar

4 tsp cornstarch

Directions:

1.  Preheat the oven to 375 degrees

2.  Grease a 9 X 13 casserole dish

3.  For Crust and topping:  stir together the sugars, baking powder, salt and cinnamon

4.  Add the butter and the egg.  Blend into the flour mixture using a fork (or pastry blender).

5.  Add half of the mixture to the bottom of the casserole dish.  Pat down to form the crust.

6.  In a separate bowl, mix the sugar and the cornstarch.

7.  Toss in the blueberries

8.  Add blueberry mixture to the crust and smooth out evenly

9.  Sprinkle the rest of the dough mixture on top of the blueberries.

10.  Bake for 45 to 55 minutes.  If top is not browned sufficiently, broil the top to brown it (don’t walk away at this point!)

11.  Serve warm with ice cream or let cool completely and cut into bars
